Our own Mark Southern (add link to team page) co-chaired the American Hotel and Lodging Association Food and Beverage Committee that championed this initiative.
This innovative food waste reduction and awareness program was developed in concert with the World Wildlife Fund (WWF) and the American Hotel and Lodging Association (AHLA) with support from The Rockefeller Foundation.
These industry leaders came together to focus their efforts on understanding and mitigating food waste in the hospitality industry.
This project involved intensive research and demonstrations in properties across the country. Through these efforts, innovative strategies were identified to help engage staff, partners, and guests in assisting with waste management efforts in hotel kitchens.
